ingredients:
1 1/2 pounds skinless, boneless chicken breast meat - cubed
1/8 cup red wine vinegar
1/2 lime, juiced
1/2 teaspoon salt
1/2 teaspoon ground black pepper
2 green onions, chopped
2 cloves garlic, minced
1 teaspoon dried oregano
whole wheat tortillas, whole wheat pita, can even serve this over bulgur wheat or brown rice if you like
1 tomato, diced
1/4 cup shredded lettuce
1/4 cup shredded Monterey Jack cheese
1/4 cup salsa
1/8 cup red wine vinegar
1/2 lime, juiced

directions:
1. Toss the chopped chicken into a Ziploc bag. Add vinegar, lime juice, salt, pepper, green onion. garlic and oregano. Marinate for at least 4 hours; even better, over night.
2. Saute the chicken in the marinade until done.
3. Fill tortillas
with the chicken mixture, lettuce , tomatoes, cheese
and salsa.
